Savoury Pancakes

As a working mother, Its really difficult for me to cook different food everyday because of the time constraint. I travel 3 hours everyday, and KL is also famous for the traffic jam, so most of the time things doesn’t go as per the plan and become very hectic . Sometime(well mostly), I prefer to cook  instant and healthy recipes, which my little one can also enjoy and I can spend more time with her.

My brother-in-law shared this recipe, he recently cooked at home. He always tries something new when he is in charge of the kitchen. He said its eggless vegetarian omelette. :) yeah its definitely look like omelette, but taste differently. Well I followed the recipe and really loved it. Its quick, delicious, and most importantly approved by my daughter :)

Savoury Pancakes

Savoury Pancakes

Ingredients

  • 1 cup wheat flour ( Atta)
  • 1 cup gram flour / chickpea flour
  • 2 tablespoon semolina
  • 1 tomatoes ( medium size finely diced / 1/2 cup )
  • 1 onion ( medium size finely diced 1/2 cup)
  • 1 teaspoon ginger ( finely chopped)
  • 1/4 cup coriander leaves (finely chopped)
  • 1 teaspoon cumin seed
  • 1 teaspoon turmeric powder
  • Salt as per taste
  • Grated cheese (Optional)
  • 350 mil water

Instructions

  1. Mix all the ingredient except cheese and stir well , make sure that there will be no lumps
  2. Leave mixture for 15 mins
  3. Heat the pan and pour a cup of batter at the center and spread it like omelette.
  4. Now here is the trick, cover it with lead for 10-15 second to fully cooked from inside.
  5. turn the side, make sure that it is golden brown,  and spread some cheese on it, cook other side.

    How delicious!  It’s very common in Japan to commute at least 1 hour each way too.  And most of the time you don’t get to sit down on train/bus… it is tough.  I have a few working mom friends and it’s a lot of work waking up early to make bento for kids, go to work, and go home to cook.  You are doing great job!  And it’s nice to hear your brother-in-law is a great cook.  Most men in Japan don’t cook much… I’m thankful for my (Chinese) husband who cook once in a while.  Thank you for sharing delicious pancakes.  I can eat this anytime!

    Ila, these savoury pancakes look beyond delicious. Thanks to both you and your brother-in-law for sharing this recipe. I love everything made with chickpeas and ,of course, spices. I do not work outside home often by I know well with a busy routine and little ones to feed how handy is to have a good but simple recipe to prepare quickly. Thanks also for visiting my blog.
