Banana Bread recipe

As a mother of 2 years its difficult to cook and take the photos at the same time. I have to be alert all the time  because my little one tries to take everything away from my kitchen stand. Last night only, I forgot to keep salt back to the shelf, and after few minutes there was salt everywhere in our living room. :) So why  I am mentioning all these here, because this is the bread, my daughter and her friends love to eat at her play school.

We use to buy banana regularly for shakes, and yes it is one of the best fruit kids can have anytime, so it is always a part of our grocery list. but since the day we baked banana bread, we started buying bananas specifically for that .  I love the moist texture and also the mixed flavor of banana and vanilla. I use a very short method to make this one hope you like it…

Banana Bread recipe

Ingredients

  • 3 ripe bananas( 300 gm puree)
  • 100 gm Sugar
  • 250 gm Self raising flour
  • 1/2 cup butter ( about 3 tablespoons)
  • 3-4 drops of vanilla essence
  • 2 tablespoons egg replacer ( or simply add 2 egg )
  • 1 teaspoon baking soda

Instructions

  1. Mix banana and sugar in blender. I usually don’t waste time in mashing the banana and mixing sugar in it, simply use blender to do this task.
  2. So here are my rest of the ingredients
  3. Now first combine flour and baking soda, then add banana puree ,butter , vanilla and egg replacer and mix in.
  4. Mix in for 1 minute to make moist and soft batter
  5. Now pour batter into a loaf pan
  6. Bake it in preheated oven for 35-30 minutes at 200 degrees C or till it become golden brown.
