Chocolate muffins with the best white icing ever

We had small party at client site,everyone brought some food from home, I also  shared my homemade muffins, and posted pics on Facebook. Everyone liked those pics, My sis and BFF asked me to share the recipe, and this is how the idea of food blogging popped up into my head. I feel rewarding when people comment on posts and the most important is the friendship I am making along the way.

Initially I made my blog on blogspot, but couldn’t manage to get a proper theme, then I moved it to WordPress. Please share your thought about my blog design and let me know if you feel any changes or addition I should do in my blog.

So here is my chocolate muffins with white icing recipe

Chocolate muffins with the best white icing ever

Chocolate muffins with the best white icing ever

Ingredients

    For muffins
  • 1 1/2 cups self raising flour
  • 3/4 cup sugar
  • 2 teaspoon baking powder
  • 1 tablespoon oil
  • 1/4 teaspoon salt
  • 3/2 cup milk
  • 2 tablespoon vanilla
  • 2 tablespoon egg replacer ( or 2 eggs if you are eggitarian)
  • 2 tablespoon Harshley coco powder
  • For White icing ( for 12 muffins)
  • 1 cup icing sugar
  • 1/4 cup shortening
  • 1 teaspoon vanilla essence

Instructions

  1. Mix flour ,baking powder, sugar and coco powder
  2. Mix egg replacer and milk in blender
  3. Now mix it with flour and make smooth batter and fill it in muffins tray. Since I have small size oven I divided batter  in two parts and used 2 muffins tray.
  4. Bake it for 30 mins at 200 C pre heated oven
  5. Method I used for icing
  6. Mix icing sugar ,vanilla and shortening with hand blender, I use medium speed and mix it only for 6 minutes. (Sorry guys I forgot to take snaps after mixing :( )
  7. White icing is sufficient for 12 medium size muffins. Trust me this is the best white icing I have ever made at home.  I didn’t add water or milk at a;;, but if you feel like adding some then add water so that you don’t need to keep it in fridge.

      Hi Malou perez, WordPress provides more options to customize the page, but not very user friendly…..I  think that’s the only reason why most of the  food bloggers are using blogspot. This is something I realized only when I moved my blog to wordpress.:) :) …But you are blog looks perfect and I like the banner…

    What should i add in the icing in case I do not have veg. shortening? something easily available in India?

      Hi Jessica, you can use vegetable ghee available at grocery store, it’s nothing but vegetable fat. Try to buy one which has smooth texture not the granual one. But Some of my friends said that it is available in supermarket. Thanks for visiting my blog ! Ila
